To make soup, it needs high temperature and long duration of cooking. Thus, instant soup is better choice.  However, the major problems of instant soup are lumping of powder and need time to develop viscosity during preparation step. GENIGEL® 42, GENIGEL® 48, GENIGEL® M78, and VERITY 497 are specially developed for using as a thickener of instant soup powder. These innovative starch could provide instant thickening without lumping, provide smooth texture, and also could extend shelf-life of instant soup.
