Product Overview
Sausage is an emulsion-type meat made from meat that is partly disrupted in the presence of fat, water, salt and other functional ingredients (phosphate, carbohydrates, non-meat protein and seasonings), and then the meat batter is stuffed into a casing.  Under thermal process, the meat emulsion change from the fluid to a solid in which the fat is entrapped in the gel structure.  The sausages are available in diversity depending on their process, such as chilled sausage, frozen sausage, retort sausage. Sausage is also susceptible to change in texture by extreme heat and frozen condition, leading to unacceptable in quality.  However, consumers always expect tasty and elastic texture for good quality sausage.Siam Modified starch provides special texturing starches with an excellence in heat stable, freeze & thaw stability, which are applicable for sausage even in extreme process like retort or in frozen condition. The SMS texturing starches function like a filler embedding in protein metric while performing a good water holding capacity, these promote gel strength and elastic texture to sausage products.
